Recipe: Mushroom Bruschetta

A classic with a Finnish twist.
This delicious and crispy bruschetta is great as an aperitif, snack, appetizer or side dish. You can choose to use Funnel Chanterelles or Chanterelles. Both go wonderfully with this simply prepared dish.

Mushrooms are low in calories, low in fat, cholesterol-free and contain lots of fiber, minerals and vitamins.

What you need for 2 servings:

  • A fistful of pure nordic dried Funnel Chanterelles
  • 2-3 tablespoons olive oil
  • 1-2 cloves of garlic coarsely chopped
  • 1-2 tomatoes
  • 4-6 slices of baguette
  • A pinch of sea salt and ground black pepper
  • Fresh parsley for garnish

Soak the mushrooms in cold water for about 45 minutes. Once they are soft, squeeze out the excess water and cut them into smaller pieces.

Heat a frying pan and add one tablespoon of olive oil. Add the garlic and fry for 30 seconds, then add the chopped mushrooms. Fry for a few minutes and then set aside. Chop the tomatoes and add them to the pan. Mix everything together. Season with salt and pepper.

In a separate pan or grill pan, drizzle the bread with the remaining olive oil and toast, on both sides, until golden. Or simply toast the bread in the toaster.

Place a generous amount of the mixture on each toast and season with sea salt and ground black pepper.

Garnish with parsley.
